Soak the oats in the hot water for at least 10 minutes.
In a pot, crumble and toast the walnuts until slightly browned (1-2 minutes) and put them aside. Add the grated carrots and apples and stew them with cinnamon, cardamom and nutmeg for 5 minutes.
Add the oats, plant milk, vanilla extract and one tablespoon of maple syrup. Cook until the porridge reaches your desired consistency and add a pinch of salt. Add the porridge to a bowl
Combine the vegan yogurt with the remaining tablespoon of maple syrup and spread on top of the porridge. Add toasted walnuts and enjoy
