Grate the potatoes and onions and place them on a kitchen towel into a bowl. Add a good amount of salt and let the mixture rest for 20 minutes. Squeeze out the liquid and add the mixture to the bowl
Add potato starch, black pepper and nutmeg.
Heat up a non-stick pan and add a good amount of oil (enough so that the fritters can fry). When the oil is hot (180-200°C) add two tablespoons of the mixture per fritter and fry for a few minutes until crispy (3-4 minutes). Flip and repeat
Place the fritters on top of a paper towel to remove excess oil, season with more salt if necessary. Enjoy with apple sauce.
