Tatale - Savoury Ghanian Plantain Pancakes

These are thick and spicy pancakes made from plantains. They pair well with soups, stews and dips.

Zutaten
  

  • 2 overripe plantains peeled
  • 2 tablespoons corn or all purpose
Aromatics
  • 1 red or green onion
  • 2 garlic cloves
  • 1 knob ginger
  • 1 scotch bonnet *
Other
  • Water for batter
  • 4-5 tablespoons red palm oil *
  • 1 pinch salt

Kochutensilien

  • 1 Pestle and mortar optional

Method
 

Make the batter
  1. If you have a pestle and mortar, add the plantains and aromatics to it and mash until soft. If not, you can either use a blender or mash the plantains using a fork and finely mince the aromatics.
  2. Add the flour, a pinch of salt and start mixing while gradualling adding some water. Aim for a thick, pancake-like consistency. Let the batter rest for 5 minutes.
Fry the pancakes
  1. Add half the oil to a non-stick pan and when hot, scoop in 3 pancakes and fry on medium heat for 5-6 minutes. Carefully, try to flip and fry the other side. Repeat with the rest of the batter

  • you can add a teaspoon of chilli powder to the dough instead
