Reibekuchen – A German Classic

These potato fritters are so well known that they have different names in Germany. You might hear people call them “Baggers” or “Kartoffelpuffer”, but the term “Reibekuchen” literally translates to “Grating cake”, as you have to put in some effort to make these delicious pancakes.

  • Grate a lot of potatoes and some onions
  • Draw out their moisture by salting and letting them rest
  • Add corn starch
  • Fry in a pan

If you want to make it savoury, serve it with vegan cream cheese and some herbs. If you want it to be more sweet, add some apple sauce.

Zutaten
  

  • 400 g potatoes peeled
  • 1 white onion peeled
  • 2 tablespoons potato starch
  • 1 teaspoon nutmeg
  • Salt
  • Black Pepper
  • Vegetable Oil to fry
  • Apple sauce to serve

Method
 

  1. Grate the potatoes and onions and place them on a kitchen towel into a bowl. Add a good amount of salt and let the mixture rest for 20 minutes. Squeeze out the liquid and add the mixture to the bowl
  2. Add potato starch, black pepper and nutmeg.
  3. Heat up a non-stick pan and add a good amount of oil (enough so that the fritters can fry). When the oil is hot (180-200°C) add two tablespoons of the mixture per fritter and fry for a few minutes until crispy (3-4 minutes). Flip and repeat
  4. Place the fritters on top of a paper towel to remove excess oil, season with more salt if necessary. Enjoy with apple sauce.
