Carrot-Cake Porridge

An oatmeal inspired by one of my favourite cakes. It contains carrots and apples stewed in autumn-esque spices and topped with toasted walnuts:

  1. Crumble and toast walnuts
  2. Stew carrots and apples in warm spices
  3. Cook oatmeal
  4. Top with yogurt and walnuts

Notes & Substitutions

  • Use pecans or hazelnuts instead of walnuts
  • Grating the carrots and apples reduces the stewing time significantly
  • Besides maple syrup, apple sauce is a good choice of sweetener

Carrot-cake Porridge

Inspired by the cake, apples and carrots are cooked in warm spices, before cooking the oatmeal. Topped with yogurt and toasted walnuts, this makes the perfect fall porridge.

Zutaten
  

  • 75 g rolled oats
  • 200 ml hot water
  • 100-200 ml plant milk *
  • 20 g walnuts
  • 1 small carrot grated
  • 1/2 apple grated
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons maple syrup *
  • 150 g vegan Greek yogurt *

Method
 

  1. Soak the oats in the hot water for at least 10 minutes.
  2. In a pot, crumble and toast the walnuts until slightly browned (1-2 minutes) and put them aside. Add the grated carrots and apples and stew them with cinnamon, cardamom and nutmeg for 5 minutes.
  3. Add the oats, plant milk, vanilla extract and one tablespoon of maple syrup. Cook until the porridge reaches your desired consistency and add a pinch of salt. Add the porridge to a bowl
  4. Combine the vegan yogurt with the remaining tablespoon of maple syrup and spread on top of the porridge. Add toasted walnuts and enjoy

  • Amount depends on soaking time and desired consistency
  • Use any other sweetener, like apple sauce
  • Or any other thicker vegan yogurt.
